Ingredients
1 cup basmati rice
7-8 french beans cut into pieces
1 small carrot cut into cubes
1 potato cut into cubes
2 tblsp fresh green peas
1 onion sliced
5-6 garlic cloves chopped
1/2 inch ginger chopped
2 slit green chillies
1/4 cup chopped coriander leaves
1/2 cup curds
1 bay leaf
1/2 inch cinnamon
2-3 cloves
8-10 cloves
8-1 peppercorns
2-3 pieces nutmeg mace
2-star anise
2 Badi elaichi
2 tsp rosewater (I have not used )
Salt to taste
1/4 cup almonds and cashews
5 raisins
1/2 cup milk
4-5 strands of saffron
4 tblsp oil
3 tsp ghee
Procedure
In a bowl take warm milk and put the saffron strands, keep aside
In a vessel take 2 cups water and make it boil with half of the whole spices, salt and soaked basmati rice
Cook the rice only 80%, put the rice in a colander and drain all the water
In pan heat ghee and oil, add the remaining whole spices, green chillies, chopped garlic,ginger, onion slices and saute for 5 mins
Add turmeric pdr,chilly pdr and fry for a minute
Now add the veggies, mix well and add 1/2 cup water and cook with a lid covered till veggies are cooked
Now add salt to taste, chopped coriander leaves, curd and rose water if you are using
Now put the cooked rice over the veggies and spread neatly
Put the nuts,raisins,saffron milk ,chopped coriander leaves and 2 tsp ghee
Cover the pan with a tight lid and cook for 15 mins on a low flame
And your biryani is ready to serve
Enjoy with any raita of your choice.
