Makai Baingan Bharta





Ingredients

1 brinjal

1/4 cup corn kernels

1 green chilli

2 tsp chilli powder

1 chopped tomato

2 chopped onions

1/2 tsp turmeric powder

1 tsp ginger garlic paste

coriander leave and ginger Julians for garnishing

4 tsp oil




Procedure

  • Take brinjal, apply oil and roast on a gas flame or in the oven

  • Peel it and take the pulp and mash it

  • In Kadai take oil and put ginger garlic paste, chopped green chilli and fry

  • add chopped onion and fry

  • Put chopped tomato and fry well

  • Add all spices and fry till aroma comes

  • Put brinjal pulp, boiled corn kernels sat and 1/4 cup water and boil

  • Garnish with coriander leaves and ginger Julians.
