Malpuri

This is a Udupi Mangaluru style Malpuri recipe. Malpuri is prepared using maida, sugar, salt, cardamom, yellow colour and baking soda. Malpuri is a very tasty recipe prepared by deep or shallow frying. Preparing Malpuri is very easy. Just mix in the ingredients, rest the batter for one hour and then fry it. Malpuri will be soft and juicy inside but crispy towards the edge and outer surface.


Ingredients

1 cup maida / all-purpose flour

3/4 cup sugar

1 cup buttermilk

1 fistful fine Rava / semolina

1 tsp

Elaichi / cardamom powder

Pinch of saffron colour

Ghee or oil for deep frying


Procedure


  • Put maida, sugar, buttermilk, Rava, Elaichi powder and saffron colour in a bowl

  • Mix well, add water if needed to get the dosa batter consistency

  • Keep covered for one hour

  • Heat ghee or oil in a pan and put one ladle of batter

  • Cook on a medium flame, once it becomes light brown from the sides, slowly flip it

  • Cook until its sides becomes brown and crisp

  • Take it on a ladle, press with another ladle and put it on a tissue paper

  • Serve hot and enjoy
