Ingredients
1 packet baby corn (15 nos)
1/2 cup onion cut into cubes and separate the layers
2 tblsp spring onion greens
1/4 cup capsicum cut into cubes
6 garlic cloves finely chopped
1/2 inch ginger finely chopped
1 tomato
2 green chillies
1 tsp red chilli sauce
2 tsp tomato ketchup
1/2 tsp pepper powder
1/2 tsp red chilli powder
1 tsp vinegar
1 tsp sugar
5 tsp oil + oil for deep frying
salt to taste
chopped coriander leaves for garnishing
2 tsp cornflour mixed with 1/4 cup water
For the batter:
3 tblsp cornflour
1 tsp ginger garlic paste
1/2 tsp pepper pdr
Salt to taste
Mix the above ingredients with little water and make a semi-thick batter
Procedure
Wash and cut the corn into 2 pieces and mix with the batter
Heat oil and deep fry corn into crisp fritters and keep aside
Crush the tomato and green chillies and keep them aside
Heat a pan and fry chopped garlic, ginger till light brown
add onion chunks and saute till transparent
Put the tomato-onion paste and fry for 5 mins
Add capsicum cubes Spring onion, salt and saute for 2 mins
Add chilli powder, pepper powder,chilli sauce, ketchup, vinegar, sugar and mix well
add the cornflour slurry and let it boil till it becomes thick
Now put the fried corn fritters, and toss well
Garnish with chopped coriander leaves.
