Masala Bhaat





Ingredients

1 cup basmati rice

7 tsp oil/ghee

2 sliced onions

1 cup veggies chopped like gobi, carrot, beans, potato, and green peas

1/2 tsp turmeric powder

Salt to taste

2 tsp lime juice

chopped coriander leaves for garnishing


Make a paste of:

2 tsp coriander seeds

1 tsp fennel seeds/ saunf

2 cloves

1 black cardamom

1/2 inch cinnamon

1 star anise

1/2 inch ginger

5 garlic cloves

1/4 cup coriander leaves

5 mint leaves

5 peppercorns

2 green chillies

Grind into a fine paste and keep aside




Procedure

  • Wash rice and soak in water for 20 mins

  • Heat oil in a cooker, saute onion slices till light pink in colour

  • Add the masala and fry for 5 mins

  • Drain water from rice and add to it, fry for 2-3 mins

  • Add the chopped veggies,salt, turmeric pdr and mix well

  • Add 1 1/2 cups water and close the cooker lid

  • Switch off the gas after 2 whistles

  • Once the steam is released, open the lid, add lime juice, coriander leaves and mix well

  • Serve hot with raita.
