Masala Nippattu / Savory Onion Crackers are the perfect healthy teatime snacks. The authentic way of making nippattu is deep frying it in oil, but this is bakery-style baked nippattu. Baking is indeed a healthy choice when compared to deep frying.
Ingredients
2 cups all-purpose flour/ maida + 2 tbsp to dust
1 tbsp cornflour
2 tsp milk powder
1 tsp baking soda
1 tsp salt / or to taste
1 tsp red chilli powder
2 tsp sugar
4 tbsp melted butter
3 tbsp oil
2 tbsp finely chopped coriander leaves
2 tbsp chopped mint leaves
10-12 chopped curry leaves
1 onion finely chopped
2 finely chopped green chillies
1 tbsp white sesame seeds/ til
2 tbsp crushed peanuts
Water to knead as required
Procedure
Sift the all-purpose flour along with the cornflour, milk powder, baking soda, and salt to a large bowl, add the sugar and mix well.
Add chopped coriander leaves, mint leaves, curry leaves, chopped onion, green chillies, sesame seeds, crushed peanuts, melted butter, and oil. Mix well.
Sprinkle water a few spoons at a time and mix to form a stiff dough. Cover and refrigerate the dough for 15-20 mins.
Divide the dough into four portions and roll each portion into a disc of 1 mm thickness.
Using a cookie cutter or a small lid cut out the crackers into desired shapes and prick holes into the dough using a fork.
Alternatively, pinch small lemon-sized balls, place them between two plastic sheets, and press to flatten them into a disc.
Arrange the crackers on a greased baking sheet and bake in a preheated oven at 180 degrees C for 15-20 minutes, flipping once after 10 minutes.
Repeat the procedure with the remaining dough.
Allow the crackers to cool completely before storing them in an airtight jar.
Enjoy the nippattu/crackers with a cup of hot tea or coffee.
