Ingredients
1/4 kg long purple or green brinjals
2 onions
1 tomato
1 tsp ginger garlic paste
3 tsp oil
1 tsp mustard
pinch hing powder
1/2 tsp haldi
2 tsp vangi bhaat masala
salt to taste
coriander leaves for garnishing
Procedure
In a pan take oil to add mustard,hing powder, chopped onions
Saute onions and add ginger garlic paste and fry for 2 minutes
Add chopped tomato and saute till it becomes soft
Put brinjal cut into pieces, salt to taste and haldi
Cover till it is cooked
Add vangi bhaat masala and mix
Garnish with coriander leaves
Goes well with rotis
