Masala Vangi






Ingredients

1/4 kg long purple or green brinjals

2 onions

1 tomato

1 tsp ginger garlic paste

3 tsp oil

1 tsp mustard

pinch hing powder

1/2 tsp haldi

2 tsp vangi bhaat masala

salt to taste

coriander leaves for garnishing




Procedure


  • In a pan take oil to add mustard,hing powder, chopped onions

  • Saute onions and add ginger garlic paste and fry for 2 minutes

  • Add chopped tomato and saute till it becomes soft

  • Put brinjal cut into pieces, salt to taste and haldi

  • Cover till it is cooked

  • Add vangi bhaat masala and mix

  • Garnish with coriander leaves

  • Goes well with rotis
