Ingredients
For the outer cover:
Take 2 cups wheat flour
Salt to taste
2 tsp oil
Mix well the above ingredients in a bowl. Adding water knead into a semi-soft dough and keep aside.
For the stuffing :
2 Tsp oil
1 tsp jeera/ cumin seeds
1/2 tsp hing/asafoetida pdr
1/2 inch grated ginger
1/2 tsp haldi/ turmeric pdr
1 tsp red chilli pdr
2 tsp garam masala pdr
2 boiled potatoes
1/4 cup grated carrot
1/4 cup chopped palak/spinach
1/4 cup grated cauliflower/ gobi
Salt to taste
chopped coriander leaves
Procedure
In a pan heat oil, add jeera,hing, ginger, onion chopped and saute for a while
Put grated gobi, carrot, little salt and cook for 5 mins
Add chopped palak and saute for 2 mins, followed by allspice powders
Add boiled, mashed potatoes, salt and toss well
Add chopped coriander leaves and mix, your stuffing is ready
Divide the dough into portions and make balls
Roll each ball into a small roti, keep 2 tblsp filling, close it and again roll into a paratha
Heat tava and cook paratha, adding oil or ghee
Serve hot with curds, pickles or any sabji of your choice.
