Mixed Veg. Paratha





Ingredients


For the outer cover:

Take 2 cups wheat flour

Salt to taste

2 tsp oil

Mix well the above ingredients in a bowl. Adding water knead into a semi-soft dough and keep aside.

For the stuffing :

2 Tsp oil

1 tsp jeera/ cumin seeds

1/2 tsp hing/asafoetida pdr

1/2 inch grated ginger

1/2 tsp haldi/ turmeric pdr

1 tsp red chilli pdr

2 tsp garam masala pdr

2 boiled potatoes

1/4 cup grated carrot

1/4 cup chopped palak/spinach

1/4 cup grated cauliflower/ gobi

Salt to taste

chopped coriander leaves





Procedure

  • In a pan heat oil, add jeera,hing, ginger, onion chopped and saute for a while

  • Put grated gobi, carrot, little salt and cook for 5 mins

  • Add chopped palak and saute for 2 mins, followed by allspice powders

  • Add boiled, mashed potatoes, salt and toss well

  • Add chopped coriander leaves and mix, your stuffing is ready

  • Divide the dough into portions and make balls

  • Roll each ball into a small roti, keep 2 tblsp filling, close it and again roll into a paratha

  • Heat tava and cook paratha, adding oil or ghee

  • Serve hot with curds, pickles or any sabji of your choice.
