Moong Sprouts Usli / Green Moong Sundal

Moong sprouts usli / Hesaru KaaLu usli or Green moong sundal is a tasty and healthy snack prepared using sprouted green gram or moong beans. these moong sprouts are very good for health.


Ingredients

1 cup moong sprouts

3-4 tsp oil

1 tsp mustard

1/2 tsp turmeric powder

1 sprig of curry leaves

1 tsp cumin seeds/ jeera

3-4 slit green chillies

2 finely chopped onion

Salt to taste

2 tbsp fresh coconut gratings

2 tbsp chopped coriander leaves

1/2 tsp lemon juice



Procedure


  • Cook moong sprouts in the cooker with a little salt and 1/4 cup water. Cook for only one whistle, as it cooks fast.

  • Heat oil, add mustard, let it crackle. Tip in the curry leaves, green chillies, and chopped onions.

  • Saute onions for 5 minutes, add turmeric powder, jeera and fry for a second.

  • now tip in the boiled sprouts, salt to taste, mix well and cook for 5 minutes.

  • Finally garnish with coconut gratings, chopped coriander leaves, and lemon juice

  • Serve hot with roti or rice and dal.
