Mushroom Masala





Ingredients


1 pack of mushrooms

3 ghee

1 tsp cumin seeds

1/2 tsp turmeric powder

1 tsp Garam masala

2 tsp red chilli powder

3 tsp fresh cream

Salt to taste

Chopped coriander leaves


For the masala paste:


2 tsp oil

1 tsp ginger garlic paste

2 tblsp chopped capsicum

2 finely chopped onions

1 tomato finely chopped

6 cashew nuts cut into bits

Heat oil, add chopped onions and fry till transparent. add ginger garlic paste and fry till the raw smell disappears. Add cashew bits, chopped capsicum and tomatoes and cook for 5 mins. Turn off the flame, grind it into a smooth paste once it comes to room temperature




Procedure

  • Wash and cut the mushrooms into two or 4 pieces and marinate with 1/2 tsp salt and 1/2 tsp red chilli pdr. Keep aside for 20 mins

  • Heat ghee, put cumin seeds, ground masala paste and saute for a while

  • Add the turmeric pdr, garam masala pdr and red chilli pdr and cook the masala for 3-4 minute

  • Add the marinated mushrooms, salt to taste and 1/4 cup water. Close the lid and cook until the mushrooms are cooked and well blended with the masala

  • Check the salt, add fresh cream and mix well

  • Garnish with chopped coriander leaves and serve hot with poori, roti, naan or paratha
