Delicately spiced and juicy mushrooms bhaji served with butter toasted pav buns was very unique, packed with flavors and taste.
Ingredients
2 potatoes
2 tomatoes
2 onions chopped
6 finely chopped mushrooms
1/2 green capsicum
1/4 cup green peas boiled
2 tbsp oil
2 tsp pav bhaji masala
2 tsp red chilli powder
1 tsp ginger garlic paste
Salt to taste
2 tbsp butter
1/4cup chopped coriander leaves
1 lemon
Procedure
Boil the potatoes in the cooker for 3-4 whistles, peel and mash it with boiled green peas
Heat oil in a pan, fry ginger garlic paste and add 3/4 of the chopped onions
Saute for 3-4 mins, add chopped tomatoes and fry till the oil separates or it becomes mushy
Add the chopped capsicum, mushrooms and cook for 5mins, followed by mashed potatoes and green peas
Bring it to boil and simmer for 10 mins pressing it with the back of the spoon a few times
Add red chilli powder, pav bhaji masala, little water, salt to taste and cook on a medium flame for 5 mins stirring continuously
Garnish with coriander leaves
Heat Tava, slice the pav horizontally into two and pan fry adding butter
Serve with the prepared bhaji, lemon slice and chopped onions.
