Phanna Upkari is a super-spicy, delightfully tangy Konkani dish made with very few ingredients. Usually, this dish is prepared with fish like prawns, mackerel, silverfish, or pomfret. Vegetarians can also enjoy this dish using mushrooms, cauliflower, or potato.
Ingredients
15 mushrooms
3 onions
1 finely chopped tomato
8 tsp oil
Salt to taste
For the masala paste:
1/4 tsp coriander seeds
2 tbsp grated fresh coconut
6-8 red chillies
little tamarind
In 1 tsp oil roast coconut, coriander seeds and red chillies till dark brown and grind with tamarind into a fine paste and keep aside.
Procedure
Wash mushrooms and cut into halves. keep aside.
In a pan heat oil and fry onions chopped till brown, add the chopped tomatoes andcook till they turn mushy.
Now add the ground masala paste,fry it for 5-10 minutes.
Tip in the chopped mushrooms,salt to taste,1/4 cup water and cook till the mushrooms are done.
Turn off the flame and serve hot with rice and dal.
This also tastes yummy with idli,dos,chapati,idiyappam or appam.
