Mushroom Rice With Chilli Gobi





Ingredients

1 cup basmati rice wash and soak in water for 30 mins

6 tsp oil or ghee

2 sliced onions

1/2 tsp turmeric pdr

1 tsp malwani masala pdr or garam masala

1 tsp lemon juice

1/4cup green peas

5-6 mushrooms sliced

chopped coriander leaves

3-4 mint leaves


Roasted cashews and fried onion slices for garnishing


For the masala paste:

Grind 1 green chilli,1/2 inch ginger,4 garlic cloves,2 lavang,1/2 inch cinnamon into a fine paste, and keep aside.


For the chilli gobi:


1 cup gobi/cauliflower florets

1/2 capsicum cut into cubes

1 onion chopped

1 green chilli chopped

5 garlic cloves finely chopped

1/2 inch ginger chopped

2 tsp tomato ketchup

2 tsp red chilli paste

1 tsp soya sauce

1 tsp vinegar

2 -3 tsp CHINGS CHILLI MASALA POWDER

Salt to taste

Chopped coriander leaves for garnishing


For the marination:

4tblsp cornflour

2 tblsp rice flour

1 tsp chilli pdr

Salt to taste

Make a paste of these ingredients, marinate the gobi florets and deep fry into crisp fritters and keep aside




Procedure


  • To make rice In a cooker heat oil or ghee,saute sliced onions till transparent

  • Add the masala paste fry till raw smell goes,followed by turmeric pdr,malwani masala and fry for a minute

  • Drain the water from rice and add the rice,fry for 5 mins,followed by green peas and sliced mushrooms

  • Add the salt, lemon juice,1.5 cups water and cook for 2 whistles

  • Once the steam is released ,open the lid,garnish with chopped coriander leaves,mint leaves,fried cashews and onion slices.

  • To make chilli gobi in a pan heat oil, fry garlic, ginger and green chillies chopped till light brown in colour

  • Add onion chopped and saute for a while, followed by red chilli paste and fry for 2 mins

  • Add soya sauce, ketchup, vinegar, and mix well

  • Add Chings masala pdr, capsicum cubes,1/4 cup water and salt to taste

  • Add the fried gobi and toss well, check for the salt and garnish with chopped coriander leaves

  • Serve hot with any rice or noodles.
