Mushroom Sukkha




Ingredients


15 button mushrooms

1 onion finely chopped

5 tsp oil

curry leaves

1/2 tsp turmeric powder

Salt to taste


For the masala paste:

1 tsp oil

2 tsp coriander seeds/ daniya

1 tsp cumin seeds/ jeera

5 fenugreek seeds/ methi

5 garlic cloves

1/2 onion roughly chopped

5 red chillies

3/4 cup fresh grated coconut

Little tamarind

In a pan heat oil and roast daniya, jeera, methi seeds, when it is half done add red chillies, garlic and onion and fry for another 5 mins.

Grind the roasted ingredients into a fine paste with tamarind, once it is done add grated coconut and just pulse it (run the mixer only for a second)




Procedure


  • Heat oil in a pan,add curry leaves and chopped onions, saute till it turns light pink

  • Add the masala and fry for 5 mins, add the cleaned and sliced mushrooms, salt and 1/4 cup water

  • Cook with a lid covered till the mushrooms are done

  • Open the lid and cook till it becomes dry

  • Serve hot with roti, dosa or rice and dal.
