Paneer Burji Gravy

Paneer recipes are always a popular choice for most vegetarians. Paneer is generally used in the form of dice, in curries or stuffed inside some snacks. Paneer burji, using crumbled paneer is one such popular egg alternative that would provide creaminess and richness without egg.






Ingredients

200 gms crumbled paneer

1/2 cup boiled green peas (optional)

2 tbsp finely chopped capsicum

2 finely chopped onions

2 finely chopped tomatoes

4 tsp oil

1 tsp cumin seeds/ jeera

1/2 tsp turmeric powder/Haldi

1 tsp ginger garlic paste

1 tsp coriander/dhaniya powder

1/2 tsp cumin/jeera powder

1 tsp red chilli powder

2 tsp besan

1/2 tsp garam masala powder

Salt to taste

1 tsp Kasuri Methi

Chopped coriander leaves



Procedure


  • Heat oil in a pan, add cumin seeds, saute until the cumin turns aromatic.

  • Now add chopped onions, ginger-garlic paste, and saute until onions turn golden brown.

  • keeping the flame on low, add turmeric, chilli powder, cumin powder, coriander powder and besan.

  • Saute until the spices turn aromatic. Adding besan gives nice thickness and body to the gravy.

  • Add chopped tomatoes and saute until the tomatoes turn soft and mushy. Add capsicum, boiled green peas and saute for a minute.

  • Add 1/2 cup water and mix adjusting the consistency as required.

  • Now add the crumbled paneer and mix well. cover and simmer for 2 minutes. do not overcook as the panner will turn chewy. Finally add garam masala, Kasuri methi and give a nice mix. Turn off the flame.

  • Garnish with chopped coriander leaves. Enjoy paneer bhurji gravy with pav or chapati.
