QUESADILLA is a part of Mexican cuisine. Makes a complete meal, with cooked chicken, bell peppers, and zucchini and mixed with lots of cheese, stuffed in tortillas. These tortillas are homemade. I've used all-purpose flour to make tortilla wraps.
Ingredients
For the tortillas:
2 cups all-purpose flour (maida)
2 tblsp butter
1/2 tsp salt
1/2 tsp baking powder
1 cup warm water
Mix all these ingredients and make a soft dough and keep covered for 1/2 an hour
For the stuffing:
1/4 cup crumbled paneer
1/4 cup zucchini pieces
1/4 cup capsicum chopped
1/4 cup chopped onion
2 tsp oil
1/2 tsp pepper powder
1 tsp chopped garlic
1 tsp red chilli sauce
Mozzarella cheese
Salt to taste
Procedure
Make big lemon size balls with the dough and roll them into a thick roti
Cook the roti on tava both the sides and keep aside
In a pan heat oil, saute garlic, onion, and all other ingredients (except cheese)
Add salt and mix well
Take one roti, put around 3 tblsp of stuffing on one side of it
Put a generous amount of grated cheese over it and close with the other half part of the roti
Press it and put a hot tava and cook with on both the sides, adding oil
Cut into 2 pieces and serve hot with ketchup.
