Pathrodo is the King of Konkani cuisine. Pathrode is spicy pinwheels prepared using colocasia leaves. A Konkani cuisine delicacy. Pathrodo are best enjoyed steaming hot with loads of coconut oil on top. Leftover pathrode are turned into lip-smacking dishes again. A yummy side dish for lunch, dinner, also called pathrade upakari in Konkani. It is a simple stir-fried patrado.
Ingredients
1 cup leftover pathrado cut into pieces
5 tsp oil
1 tsp mustard
1 tsp urad dal
2 red chillies
curry leaves
1 onion finely chopped
2 tbsp grated fresh coconut
Salt to taste
Procedure
In a pan heat oil, add mustard. When it starts crackling add curry leaves, urad dal and fry till dal turns brown in colour
Add red chilli bits and chopped onions and saute for 5 mins or till they turn light brown
Now add the pathrade cut into pieces, a little salt and grated coconut
Mix well and toss it for 5 mins, serve hot with rice and dal.
