Pav bhaji is a fast food dish from India consisting of a thick vegetable curry served with a soft bread roll. Its origins are in the state of Maharashtra.




Ingredients
8 number pav
2 cups boiled and mashed potatoes
3 tbsp grated cauliflower
1/4 cup finely chopped capsicum
3 tbsp oil
1 cup chopped onions
1 tsp ginger garlic paste
2 cups finely chopped tomato
Salt to taste
1.5 tbsp pav bhaji masala
1/2 tsp red chilli powder
2 tsp lemon juice
2 tbsp butter
A few sprigs of coriander leaves
A lemon slice
Procedure
Heat oil in a non-stick pan, add ¾ cup chopped onions and saute. When they turn golden add ginger-garlic paste and saute.
Add cauliflower and saute. Add mashed potatoes and mix. Add fresh tomato puree and ready-made tomato puree and mix well. Add ¾ cup water and mix and cook for 3-4 minutes.
Add green capsicum and mix well. Cover and cook for 3-4 minutes.
Add red chilli powder and lemon juice and mix. Add butter and mix.
Chop coriander leaves and mix.
Transfer into a serving bowl, garnish with remaining onion and a lemon slice and serve hot with pavs.
