Pendaro is a wild veggie found in the coastal Karnataka forest regions. It is available only during the monsoons, especially during the Ganesha festival. This is very rich in iron contents.PENDARO is the Konkani word for this veggie. Not able to get the English or Hindi name for this.
Ingredients
2 nos pendaro
2 tbsp rice flour
Oil for frying
For the marination:
1 tbsp rice flour
2 tbsp red chilli powder
Salt to taste
1/2 tsp hing
Add water and make a thick paste of the above ingredients
Procedure
Cut the ends of the veggie, peel it and cut into half and remove the seeds
Cut into thin roundels and keep in water, wash well and apply little salt to the roundels
Apply the masala paste to the pieces according to your taste
Roll each piece in the rice flour and deep fry on a medium flame till they turn crisp and golden brown.
Serve hot with rice and dal.
