Pendare Talasani/Stir Fry

Pendaro is a wild veggie found in the coastal Karnataka forest regions. It is available only during the monsoons, especially during the Ganesha festival. This is very rich in iron contents.PENDARO is the Konkani word for this veggie. Not able to get the English or Hindi name for this.



Ingredients

3 nos pendaro

2 tbsp oil

10- 12 crushed garlic cloves

4 red chillies cut into bits

Salt to taste




Procedure


  • Cut the ends of the veggie, peel it and cut into 4 pieces

  • Discard the seeds and cut them into thin slices

  • Wash it well, drain the water, apply little salt and keep aside for 30 mins

  • Heat oil in a thick-bottomed non-stick or cast iron Kadai ,put crushed garlic and red chilli bits

  • Fry until garlic becomes golden brown

  • Squeeze water from the veggies and add it to the pan

  • cook on a low flame covered with a lid, until it is done

  • Serve hot with rice and dal
