Potato Spinach Rice





Ingredients

1 cup basmati rice

2 medium-sized potatoes cut into wedges or fingers

2 sliced onions

2 tsp + 6 tsp oil or ghee

whole garam masala (bay leaf,elaichi, clove, cinnamon)

1 cup finely chopped spinach(palak)

1 tsp red chilli powder

1 tsp garam masala powder

1/2 tsp turmeric powder

2 tsp lime juice

chopped coriander leaves

Salt to taste


To make a paste:

3 green chillies

1/2 inch ginger

5 garlic cloves

2 tsp cumin seeds (jeera)



Procedure

  • In a pan heat 2 tsp oil and shallow fry potato fingers with salt and 1 tsp red chilli powder with a covered lid till it is cooked

  • In the cooker take 6 tsp oil and saute sliced onions till it becomes translucent.

  • Put ground masala, whole garam masala and fry for 3 minutes

  • Add chopped spinach and fry for 2 minutes

  • Put garam masala, turmeric powder, rice and fry for 5-6 minutes

  • Add lime juice, salt to taste, give a stir and put 1 1/2 cups of water

  • Close the lid and switch off the gas after 2 whistles

  • After the steam is released open the lid, add chopped coriander leaves,fried potato fingers and mix gently with a fork

  • Serve hot with any raitha.
