Prawn green ghee roast

Prawn green ghee roast is a popular coastal Indian dish. particularly in the Mangalorean and Goan cuisines. The dish is known for its vibrant green colour and rich, aromatic flavor profile. The combination of green chillies, coriander leaves, and coconut milk createsa fresh and slightly spicy taste, while the ghee adds laxurious and creamy texture.






INGREDIENTS:

15 prawns, cleaned and deveined

For marination:

1 tsp salt

1/2 tsp turmeric powder

1/2 tsp pepper powder

2 to 3 green chillies

4 garlic cloves

A fistful of coriander leaves

3 tbsp ghee

Few curry leaves

8 cashew nuts

1 big onion, finely chopped

1/2 cup coconut milk



PROCEDURE:

  • To make powder:

    1 tsp dhaniya /coriander seeds

    1/2 tsp cumin seeds/jeera

    5 to 6 fenugreek seeds/ methi

    6 to 8 pepper corns

    Dry roast the above ingredients till a pleasant aroma comes.

  • Transfer it to a bowl, add garlic cloves to the pan, and roast it for 2 to 3 minutes

  • Roast the chopped coriander leaves for a minute, and grind them with roasted spices, green chilies, and roasted garlic. Make a fine paste and keep aside.

  • Heat ghee in a pan. Add curry leaves and cashew nuts and roast until the cashews turn golden brown.

  • Add chopped onions and fry until they turn transparent. Now add the ground masala paste and roast the masala until the raw smell disappears and the ghee separates from it.

  • Add in the marinated prawns and coconut milk. Cook for 5 minutes or till the prawns are cooked. Don't overcook the prawns.

  • Once it is cooked and becomes dry turn off the flame and close the lid.

  • Serve hot with rice or roti.
