KOOTU can be made with any veggies. Here I've used Pudalankai which is a snake gourd ..Snakeourd is very rich in fiber and prevents constipation. You can also use beans, chow chow, brinjal, or drumsticks in place of snake gourd.
Ingredients
2 cups snake gourd cut into cubes
2 tblsp cooked toor dal
For masala:4 tblsp grated fresh coconut
2 red chillies
1/2 tsp jeera
1/2 tsp tamarind paste
Tempering:2 tsp oil 1 tsp mustard
curry leaves
1/2 tsp turmeric powder
Procedure
Cook snake gourd pieces in cooker with 1/2 cup water and a little salt
Grind the masala with little water
Add the masala to cooked snake gourd and dal
Add salt to taste and make it boil
Temper with ingredients.
Serve hot with rice and sambar.
