Pudalankai Kootu

KOOTU can be made with any veggies. Here I've used Pudalankai which is a snake gourd ..Snakeourd is very rich in fiber and prevents constipation. You can also use beans, chow chow, brinjal, or drumsticks in place of snake gourd.






Ingredients

2 cups snake gourd cut into cubes

2 tblsp cooked toor dal


For masala:4 tblsp grated fresh coconut

2 red chillies

1/2 tsp jeera

1/2 tsp tamarind paste


Tempering:2 tsp oil 1 tsp mustard

curry leaves

1/2 tsp turmeric powder




Procedure


  • Cook snake gourd pieces in cooker with 1/2 cup water and a little salt

  • Grind the masala with little water

  • Add the masala to cooked snake gourd and dal

  • Add salt to taste and make it boil

  • Temper with ingredients.

  • Serve hot with rice and sambar.
