Pulikoddel

Pulikoddel is a very popular Konkani delicacy, a coconut-based sweet, spicy and sour curry. This curry is usually prepared on special occasions and is served with steaming hot rice.



Ingredients


25 gms ashgourd / Kuvale / Kumbalakayi

3 tbsp grated coconut

2 tsp coriander seeds

4-5 methi seeds

Chana dal size hing/ asafoetida

2 tsp raw rice

3 tsp sesame seeds

Goosberry size tamarind

2 tbsp jaggery or according to your taste

Salt to taste


For the tempering:

3 Tsp oil

1 tsp mustard

1 sprig of curry leaves




Procedure


  • Remove the skin of the ash gourd and cut into medium-sized cubes

  • Wash and cook in the cooker with salt and 1/2 cup water

  • In a pan put 1/2 tsp oil and roast coriander seeds,Hing, methi seeds, sesame seeds, rice and red chillies , until light brown and nice aroma comes

  • Remove it on a plate and in same Kadai roast coconut gratings into light brown colour

  • Grind the roasted coconut and roasted spices with tamarind into a semi coarse masala paste adding water

  • Put the cooked ash gourd pieces in a vessel, add jaggery, masala paste and little water to adjust the consistency of the gravy

  • Bring it to boil on a medium flame for 10 mins, turn off the flame

  • Temper the curry with the mentioned ingredients

  • Serve hot with hot rice.
