Punjabi Style Gerkin





Ingredients

1 cup Gerkin /tendle/thondekayi/ivy gourd slit into 4 pieces

4 tsp oil

2 finely chopped onions

1/2 tsp asafoetida /hing pdr

2 green chillies crushed

1 tsp ginger garlic paste

1/2 tsp turmeric powder

1 tsp red chilli powder

2 tsp daniya jeera powder

1 tomato finely chopped

1 potato grated

2 tbsp peanuts roasted and crushed

salt to taste

chopped coriander leaves




Procedure

  • Cook the Gerkin in cooker only for 1 or 2 whistles (don't overcook )

  • In a Kadai heat oil and put hing, crushed green chillies and ginger garlic paste and fry for 5 mins

  • Add chopped onions and saute till it becomes translucent

  • Put the grated potato, salt and cook for 5 mins

  • Add the chopped tomato and fry well, till it becomes mushy

  • Put all the spice powders, and fry for a minute

  • Add the cooked gherkins, peanut pdr and toss well

  • Garnish with chopped coriander leaves and serve hot with rotis.
