Ragi mudde or finger millet balls are gluten-free traditional balls made with finger millet flour/ ragi/ nachni. This is a wholesome meal in the state of Karnataka and the Rayalseema region in Andhra Pradesh. It is mainly popular with the rural folk of Karnataka.
Ingredients
1 cup +2 tbsp ragi flour/nachni ka atta/Finger millet flour
2 cups +1/4 cup water
1 tsp salt
1 tsp ghee or oil
Procedure
In a pan take two cups of water, salt, and oil/ghee and let it boil.
In a small bowl take 2 tbsp ragi flour and 1/4 cup water, mix well and make a lump-free ragi water.
Pour this ragi water once the water on the gas starts boiling.
Mix continuously with one wooden stick or spatula in one direction, till it thickens and starts boiling.
Now add the ragi flour and mix continuously in one direction till it becomes on thick mass.
Once it thickens, close it with a lid and cook on a low flame for 5 minutes
After 5 minutes wet your hands and make medium size balls.
Serve mudde or balls with any spicy curry of your choice.
