Rajasthani Bajre Ki Roti

Bajre ki Roti is a traditional flatbread made with Bajra or Black pearl millet flour making it extremely nutritious. It is high in protein. This roti is thickly rolled, cooked on Tava, and then roasted over an open flame till broken spots appear. Traditionally served with white butter/Makhan on top. You can also use ghee.



Ingredients

2 cups Bajra atta / black pearl millet flour

Salt to taste

Whole wheat flour for rolling

4 tsp ghee for smearing



Procedure

  • In a bowl, combine Bajre ka atta/ flour, salt. Add warm water and knead it into a soft dough.

  • Divide it into 8 equal portions and shape it into balls. Roll out each ball into a 6inch diameter thick roti using a little wheat flour for rolling.

  • Heat a dosa pan, place the roti over it and cook it for a few seconds or till a few bristles appear on top.

  • Turn over roti and cook the other side for a few more seconds.

  • Lift the roti with a pair of flat tongs and roast over an open flame till brown spots appear on both sides.

  • Smear 1/2 tsp ghee on top, Repeat the same with the other balls.

  • Serve the hot roti immediately with white butter, garlic chutney, jaggery, dal, or any curry.
