
Ingredients
2 cups finely chopped amaranth leaves
5 tsp oil
1 tsp mustard
1 finely chopped onion
1 sprig of curry leaves
2-3 red chilli bits
3 tbsp freshly grated coconut
Salt to taste
Procedure
Clean the amaranth leaves, wash well and chop finely
Heat oil in a Kadai, add mustard. Once it starts crackling add curry leaves, red chilli bits and fry for a while
Add the chopped onions and saute till they turn transparent
Now put the chopped amaranth leaves and salt to taste and cook with a lid covered
No need to add water as it leaves the water
Once the greens are cooked garnish with the grated coconut and toss well
Turn off the flame and serve hot with rice or roti.
