Red Amaranth Leaves Stir Fry/ Kempu Harive Soppu Palya

Ingredients


2 cups finely chopped amaranth leaves

5 tsp oil

1 tsp mustard

1 finely chopped onion

1 sprig of curry leaves

2-3 red chilli bits

3 tbsp freshly grated coconut

Salt to taste



Procedure


  • Clean the amaranth leaves, wash well and chop finely

  • Heat oil in a Kadai, add mustard. Once it starts crackling add curry leaves, red chilli bits and fry for a while

  • Add the chopped onions and saute till they turn transparent

  • Now put the chopped amaranth leaves and salt to taste and cook with a lid covered

  • No need to add water as it leaves the water

  • Once the greens are cooked garnish with the grated coconut and toss well

  • Turn off the flame and serve hot with rice or roti.
