Set dosa is a very soft, light, and spongy dosa. These soft dosas are called set dosa as they are served in a set of 3 dosa per serving.
Ingredients
1/2 cup Sabudana/Sabbakki / Tapioca pearls
1 1/2 cups dosa rice
1/4 cup urad dal
1/4 cup poha/beaten rice/avalakki
1 tbsp chana dal
1 tsp methi/fenugreek seeds
Salt to taste
Sugar to taste
1/2 tsp cooking soda(optional)
Procedure
Wash rice,sabudana, urad dal, methi seeds,poha, and chana dal 3-4 times and soak in enough water for 5-6 hours.
Drain all the water and grind into a smooth batter. Let it ferment for 7-8 hours.
The next day before making dosa add salt, sugar, and cooking soda, mix well. Adjust the consistency of the batter adding water if needed.
Heat tava and make thick dosa, adding a tsp of oil. Cook both the sides and serve hot with chutney, sambar, or sagu.
