Sabudana Set dosa

Set dosa is a very soft, light, and spongy dosa. These soft dosas are called set dosa as they are served in a set of 3 dosa per serving.






Ingredients

1/2 cup Sabudana/Sabbakki / Tapioca pearls

1 1/2 cups dosa rice

1/4 cup urad dal

1/4 cup poha/beaten rice/avalakki

1 tbsp chana dal

1 tsp methi/fenugreek seeds

Salt to taste

Sugar to taste

1/2 tsp cooking soda(optional)




Procedure


  • Wash rice,sabudana, urad dal, methi seeds,poha, and chana dal 3-4 times and soak in enough water for 5-6 hours.

  • Drain all the water and grind into a smooth batter. Let it ferment for 7-8 hours.

  • The next day before making dosa add salt, sugar, and cooking soda, mix well. Adjust the consistency of the batter adding water if needed.

  • Heat tava and make thick dosa, adding a tsp of oil. Cook both the sides and serve hot with chutney, sambar, or sagu.
