Sabudana Vada

Sabudana vada, also called 'Sabu vada', is a traditional deep-fried fritter from Maharashtra, India. It is often served with spicy green chutney and along with hot chai and is best eaten fresh. In other parts of the country, Sabudana vada is the best option to have when fasting.






Ingredients


1/2 cup sabbakki / sabudana / tapioca pearls

1 cup potatoes boiled

3 tblsp peanuts

1/4 cup chopped coriander leaves

1 tsp cumin seeds/ jeera

2 chopped green chillies

Salt to taste

Oil for deep frying



Procedure

  • Put sabudana in a bowl and rinse well, add half a cup water and soak it for 4-6 hrs. depending on the kind. Once they are soaked take few pearls and press down to check if they are soaked

  • The pearls must be mashed well

  • Dry roast peanuts and cool them completely

  • Place them in a blender and make a coarse powder

  • Peel the boiled potatoes and mash them. Please do not overcook the potatoes

  • Mix together soaked sabudana, peanuts, mashed potatoes, chopped green chillies, chopped coriander leaves, salt to taste and jeera

  • Mix well and divide into portions

  • Make balls and slightly flatten them to patties or vadas

  • Heat oil and deep fry vadas on a medium flame till they turn crisp and golden brown

  • Serve hot with ketchup or green chutney

  • Enjoy with hot coffee or tea.
