Soorna Koot /Yam Kootu

Soorna Koot is a lip-smacking, simple coconut-based chutney with crispy, fried yam. This is a simple no-cook Konkani style coconut chutney with minimum ingredients. Enjoy this as a side dish with rice and dal or any meal.




Ingredients

1/2 cup sooran/yam/ elephant foot

Oil for deep frying

Salt to taste


For the masala :

1/2 cup grated fresh coconut

1/4 tsp coriander seeds(daniya)

1/4 tsp assafoetida

2 red chillies

5 methi seeds (fenugreek )

Small piece of tamarind

1 tsp oil

Salt to taste


For the tempering:

2 tsp oil

1 tsp mustard

5-6 curry leaves




Procedure


Firstly, wash sooran/yam/elephant foot and remove the skin. Cut it into small cubes.

Apply 1/2 tsp salt to that cubes and keep aside for 20 mins.

After 20 mins, squeeze all the water from the sooran cubes and deep fry them till it turns crisp and brown.

Meanwhile heat one tsp oil in a pan, roast dhaniya, methi,hing, and red chillies till you get a nice aroma.

Grind the roasted ingredients with tamarind and coconut gratings. Make a smooth paste.

Add water to the ground chutney and adjust the consistency as per your taste.

Add the tempering to it and mix. Just before serving, add the deep-fried yam cubes to the chutney and serve with rice and dal.
