Kirlanu Moogu Sprouted moong and Kooka is a Chinese potato in Konkani.This is a typical Konkani side dish for rice...Ghashi is a coconut-based curry seasoned with mustard and curry leaves...You can use, chana, black-eyed beans, white navy beans or rajma with Chinese potato or yam or raw jackfruit..tastes wonderful with white rice or even with idli, dosa or chapati.
Ingredients
1 cup sprouted green gram/ moong
1/2 cup Chinese potato/ kooka or yam or potato or raw jackfruit
1 cup grated fresh coconut
4 red chillies roasted in Lil oil
Little tamarind
Salt to taste
For the tempering:
4 tsp oil
2 tsp mustard
curry leaves 1/2 tsp cumin seeds/ jeera
Procedure
Soak green gram overnight, then drain all the water, once it is soaked
Transfer them into a kitchen towel and keep closed for a full day in a warm place
The next day use it to make the curry
Cook sprouts in cooker with 1/2 cup water and salt only for one whistle
transfer the cooked moong in a vessel
Peel the kooka , cut it into cubes and wash in water well till you get the clean water
Cook it with little water and salt in cooker for 2-3 whistles
Grind coconut gratings, red chillies and tamarind into a fine paste
Add this masala paste to the boiled moong and kooka mixture, adjust the consistency adding water, check for the salt
Make it boil for 5-10 mins
Temper the curry with the mentioned ingredients, serve hot with rice.
