This is a very simple and easy side dish to prepare with the minimum ingredients.
Can be served with crispy flaky roti, fluffy naan bread, or hot steamed rice. You can also have this with fried rice, noodles, or pulav.
Ingredients
500 gms cleaned and deveined prawns
4 garlic cloves
1/2 inch piece ginger, peeled, roughly chopped
1 large mild green chilli, roughly chopped
1 tbsp vegetable oil
2 tbsp curry powder or Chettinad masala powder or Kitchen King masala powder
1 tomato, finely chopped
1 cup coconut milk
1 small cinnamon stick
Pinch of sugar
Salt to taste
Chopped coriander leaves
Few curry leaves
1 small onion finely chopped
Procedure
Use a mortar and pestle to pound the garlic, ginger, chilli, and a pinch of salt into a very rough paste. Heat the oil in a wok or saucepan over medium heat. Add the garlic paste and cook, stirring, for half a minute. Add chopped onions and saute till it turns translucent.
Then add the curry powder and finely chopped tomato, and curry leaves and stir for another half a minute.
Cook for about 2 minutes to allow the tomato to soften. Then add the coconut milk and cinnamon stick. Simmer for about 8 minutes.
Add the prawns and cook for 2-3 minutes or until the prawns are cooked through. Season with sugar and salt to taste. Garnish with coriander leaves
Serve hot with roti, naan, or rice.
