Sweet Corn Kadubu / Sihi Mekke Jola Kadubu

This is a very healthy and tasty breakfast recipe. These are steamed dumplings, prepared with crushed sweet corn, some veggies, spices, and mixed with curds, semolina, and rice flour. You can have this with chutney for breakfast or as a snack.






Ingredients

2 Sweet corn Cobs

1/2 cup finely chopped or grated carrot

1/4 cup finely chopped beans

2 tbsp finely chopped capsicum

2 tbsp coconut gratings

4-5 chopped green chillies

1/2 inch chopped ginger

3 tbsp chopped coriander leaves

3 tbsp rice flour

3 tbsp upma rava/semolina

3-4 tbsp curd

2-3 tsp oil

Salt to taste

1/4 tsp cooking soda or Eno fruit salt(optional)




Procedure

  • Separate the corn kernels from the cob and just pulse them in the small mixer jar. Make a coarse paste, transfer it to a bowl.

  • Add all the remaining ingredients with the ground corn paste. Mix well and keep aside for 15 minutes.

  • The consistency of the batter should be slightly thick, not watery.

  • Wash and wipe the corn husk. Heat idli steamer.

  • Put a ladle full of prepared batter in the center of the corn husk and fold it from both sides.

  • Steam the kadubu/ dumplings for 15- 2o minutes.

  • Serve hot with coconut or pudina chutney.
