Ingredients
1 cup basmati rice
1/4 cup sweet corn kernels
1 big onion cut into slices
1 tsp turmeric pdr
5-6 tsp ghee or oil
chopped coriander and mint leaves
For the masala:
1/4 cup coriander leaves
5 garlic cloves
1/2 inch ginger
2 green chillies
Salt to taste
Grind the above ingredients into a fine paste and keep it aside.
Procedure
Wash and soak basmati rice in water for 20 mins
In cooker heat oil, saute onion slices till translucent
Put the ground masala and fry until the raw smell goes
Drain water from soaked rice and put into the cooker with turmeric pdr
Fry for 5 mins, add sweet corn, salt to taste, mix well
Add 1.5 cups water and cook for 2 whistles
Once the steam is released, open the lid, add chopped coriander and mint leaves, serve hot with raita.
