Thai Basil Mushrooms is a quick and easy stir-fry recipe. This side dish is full of flavours and ready in just 15 minutes, prepared with minimum ingredients. Pair this with fried rice or noodles for a tasty meal. Non-vegetarians can replace the mushrooms with prawns or chicken.



Ingredients
1 pack of mushrooms, washed and cut into halves
4 tsp oil
8 finely chopped garlic cloves
1/2 inch grated ginger
2 tbsp finely chopped spring onion greens
8 fresh basil leaves
3 fresh red chillies finely chopped ( You can also use green chillies)
1 tsp Soya sauce /oyster sauce
1 tsp red chilli sauce
1/2 tsp vinegar
Salt to taste
2-3 tsp cornflour diluted in 1/4 cup water
For the marination
1/2 tsp salt
1/2 tsp sugar
2 tsp soya sauce
Marinate the mushrooms with the above ingredients for 20 minutes.
Procedure
In a pan heat oil, saute chopped garlic, ginger for 2 minutes
Put chopped green chillies and fry for a second.
Tip in the marinated mushrooms and cook for 5 minutes
Add chopped spring onions, Basil leaves, oyster sauce/ soya sauce, red chilli sauce, vinegar and salt.
Add the cornflour slurry and give a quick boil and turn off the flame.
Serve hot with fried rice or noodles.
If you want this dry then you can skip the cornflour slurry.
