Thandla vodo

Rice fritters are crispy, crunchy, and a great snack. They are called Thandla vodo in Konkani. You can make them, store them in air-tight containers and enjoy them for up to a month.



Ingredients


1.5 cups raw rice

3 heaped tbsp urad dal

1 tsp jeera/ cumin seeds

1 tbsp butter

2-3 tbsp hot oil

Salt to taste

Oil for frying




Procedure

  • Dry roast urad dal in a pan till it becomes brown and you get a nice aroma. Make fine powder od roasted dal once it comes to room temperature

  • Wash rice and soak in water for a minimum of 2 hrs, drain and keep aside. When all the water dries but still has little moisture, then grind it and make a fine powder in the mixer

  • Put the rice powder, urad powder, salt, cumin seeds in a bowl, add butter, hot oil and mix well

  • Add water and make a smooth but firm dough

  • Make small balls of the prepared dough, spread or flatten the balls with your fingers on a greased plastic sheet

  • Heat oil and fry the vadas on a medium flame till it becomes crisp and golden brown color

  • Store in an airtight container once it comes to room temperature.

  • Serve with tea or coffee.
