The flavors of this tomato basil soup are fresh and vibrant. The only ingredients are tomatoes, onion, garlic, and basil. (plus a little oil and seasoning) This is so simple and tasty.
Ingredients
1 tsp olive oil or any refined oil
1 medium onion chopped
3 large cloves of garlic chopped very finely
8 tomatoes
1 handful basil leaves
2 tsp salt or to taste
1 tsp pepper powder or red chilli flakes
Procedure
Heat a pan over medium heat and add the oil or a couple of tablespoons of water. When hot add the onions and garlic and cook for a couple of minutes until just starting to turn golden.
Add the chopped tomatoes. Continue to cook over medium heat stirring every few minutes until the tomatoes have broken down and are soft.
Turn off the flame and let it cool. Once it comes to room temperature, blend it into a smooth paste.
Add 3-4 cups of water and strain the mixture.
Pour the soup into a vessel, add salt, basil leaves, and let it boil for 5-10 minutes.
Add pepper powder or red chilli flakes as per your taste.
Serve hot soup with garlic bread.
