Tomato Basil Soup

The flavors of this tomato basil soup are fresh and vibrant. The only ingredients are tomatoes, onion, garlic, and basil. (plus a little oil and seasoning) This is so simple and tasty.







Ingredients


1 tsp olive oil or any refined oil

1 medium onion chopped

3 large cloves of garlic chopped very finely

8 tomatoes

1 handful basil leaves

2 tsp salt or to taste

1 tsp pepper powder or red chilli flakes




Procedure


  • Heat a pan over medium heat and add the oil or a couple of tablespoons of water. When hot add the onions and garlic and cook for a couple of minutes until just starting to turn golden.

  • Add the chopped tomatoes. Continue to cook over medium heat stirring every few minutes until the tomatoes have broken down and are soft.

  • Turn off the flame and let it cool. Once it comes to room temperature, blend it into a smooth paste.

  • Add 3-4 cups of water and strain the mixture.

  • Pour the soup into a vessel, add salt, basil leaves, and let it boil for 5-10 minutes.

  • Add pepper powder or red chilli flakes as per your taste.

  • Serve hot soup with garlic bread.
