Tomato Carrot Soup



Ingredients


2 tomatoes

2 carrots

2 tsp oil

1 onion chopped

1 green chili

1/2 inch ginger

3 garlic cloves

1 bay leaf

3 tsp fresh cream

2 tbsp coconut milk

Salt and little sugar to taste

Pepper powder for serving

Procedure

  • Wash and roughly chop tomatoes and carrots

  • In cooker take oil and add bay leaf, onion and saute for 5 mins

  • Add ginger, green chili, garlic, chopped tomato carrot with 1 cup water and cook for 2-3 whistles

  • Blend it in the mixer when it comes to room temperature (remove the bay leaf before blending)

  • Strain it if necessary

  • Add water and adjust the consistency

  • Add salt, sugar and make it boil for 5 minutes

  • Add fresh cream, coconut milk and just give one boil and serve hot with pepper powder
