Tomato Mint Rice






Ingredients


1 cup basmati rice washed and soaked in water for 15-20 mins

5 tsp oil or ghee

1 sliced onion

2 finely chopped tomatoes

1 1/2 tsp ginger garlic paste

3 slit green chillies

15-20 mint leaves

1 tsp biryani/ garam masala

Whole garam masala like 1 bay leaf,2 cloves, cinnamon piece, 1-star anise, 4 peppercorns

1 tsp garam masala or biryani masala powder

Salt to taste





Procedure

  • In a cooker put oil, add whole garam masala and fry for a minute

  • Put the onion slices and saute till translucent

  • Add slit green chillies and ginger-garlic paste and fry for 3 minutes

  • Add chopped tomato and fry till it becomes mushy

  • Put biryani masala, mint leaves salt to taste and rice (drain the water)

  • Fry the rice for 5 mins and add 1 1/2 cups water and close the lid

  • After 2 whistles switch off the gas

  • Serve hot with any raita or gravy.
