Tricolour Phenori/ Chiroti




Ingredients

2 cups maida Water ( as required to make a hard dough) Ghee Fine Rava

Green and Orange food colours For the Syrup: 2 cups - Sugar 1 cup - Water 1 tsp Cardamom powder




Procedure


  • Knead 2 cups of maida with water to get a hard dough.

  • Divide the dough into 3 parts and add colour to the two parts.


  • Roll this dough into thin chapati (As thin as possible).

  • Apply around 2tsp of ghee over it and sprinkle some fine Rava over it.

  • Stack 5-6 chapatis one above the other leaving around a one-inch gap, and roll it like you roll a carpet neatly

  • For tricolour, phenol keep 3 colour Rotis alternatively and roll it

  • Cut into 1/2 inch pieces with a sharp knife,press it lightly and roll it into a thick pooris

  • Deep fry each of these on a medium flame till crisp and brown.


  • To make the syrup: Take sugar in a pan, add water to it and boil it to form a one string syrup. Then add cardamom powder to this.

  • Dip fried chirotis in the sugar syrup and place them on a plate.

  • Once it comes to room temperature store them in an airtight container.
