Uppu Dosa / Kappa Rotti

Kappa Rotti is a popular breakfast dish from Mangalore (a city in the southern part of India). It is a type of dosa (pancake) made by grinding soaked rice with freshly grated coconut, flattened rice (poha), methi seeds, and salt. This is a thick spongy dosa, soft in the center and crispy on the sides.





Ingredients


2 cups dosa rice

1 cup grated coconut

1/2 cup cooked rice

1/2 tsp cooking soda

Salt to taste

Oil for cooking dosa




Procedure

  • Soak rice in water for 5-6 hrs, wash well and grind with grated coconut and cooked rice into a smooth batter

  • Keep the batter covered in a warm place for fermentation, overnight

  • The next day, add salt, cooking soda, mix well

  • Heat tava and put a ladle full of batter and spread it slightly, put 1 tsp oil and cover with a lid

  • Cook in a medium flame till the dosa is cooked

  • Serve dosa with chutney or any other spicy curry.
