VADA PAV is the most popular street food in Mumbai. This is a combination of mashed potatoes and some Indian spices coated with besan (Bengal gram flour). It is served with pav bun and tamarind chutney, garlic red chutney, and green chutney.
Ingredients
6 pav buns
1/4 cup tamarind chutney
1/4 cup garlic red chutney
1/4 cup green chutney
For the stuffing of vada:
6 boiled, peeled, and mashed potatoes
3 green chillies
1/2 inch ginger
1/2 tsp Haldi
4 crushed garlic cloves
coriander leaves
Salt to taste
2 tsp oil + oil to deep fry
For the outer cover :
1 cup besan(Bengal gram flour)
2 tsp rice flour
1/4 tsp chilli powder
a pinch of cooking soda
salt to taste
1/4 tsp asafoetida powder (hing)
Mix all the above ingredients with water and make a thick batter
Procedure
Heat oil in a pan, add mustard, curry leaves, turmeric powder,hing.
Add crushed green chillies, ginger, and garlic and fry till the raw smell goes
Add boiled mashed potatoes, salt, chopped coriander leaves n mix well
Make lemon size balls
Dip in the besan batter and deep fry
TO SERVE:
Cut the pav into two pieces, apply chutney and place the vada on one piece and cover it with the other piece of pav. Serve with Ketchup.
