Vegetable Coin Paratha


These are Mini parathas loaded with fresh veggies like carrot, capsicum, cabbage, potato, and onion. You can also add tomato, sweet corn, etc. Tastes awesome. Try this for your kid's tiffin box. These are very simple to make and healthy too.








Ingredients

2 cups wheat flour/ gehun ka atta

1 small carrot grated

1 small boiled grated potato

3 tbsp finely chopped capsicum

1 small onion chopped

2 tbsp chopped coriander leaves

2 grated green chillies

1/2 inch grated ginger

2 tsp ajwain /caraway seeds

2 tsp jeera/cumin seeds

Salt to taste

Oil or ghee for cooking paratha




Procedure

  • Put all the veggies, in a bowl. Add chopped coriander leaves. green chilies, ginger, salt to taste, ajwain, jeera.

  • Combine everything well. Add wheat flour and give a good mix. Now knead it into a soft dough adding water as required. Cover the dough and rest it for 10 minutes.

  • After 10 minutes, knead the dough again. Divide into big balls.

  • Dust the ball with the flour and roll into a semi-thick roti.

  • Cut it into small circles / Coin parathas with the help of any lid or cutter. You can also make big parathas.

  • Heat Tawa and cook the parathas on a medium flame adding ghee or oil.

  • Roast the parathas till they turn crisp and golden brown.

  • Serve hot with curd, pickle, or any spicy chutney.
