Ingredients
1/4 cup green peas
1/4 cup paneer cut into cubes
1 capsicum cut into cubes
6-8 french beans cut into pieces
6-8 gobi florets
1 carrot cut into pieces
2 onions chopped
2 chopped tomatoes
3-4 black cardamom/ badi elaichi
1 bay leaf
2 tsp cumin seeds
6 cloves/ lavang
5-6 garlic cloves chopped
1 inch ginger chopped
4 tblsp oil
2 tblsp watermelon seeds
6-8 cashew nuts
chopped coriander leaves
2green chillies chopped
2 tsp coriander pdr
1 tsp cumin pdr
1/2 tsp turmeric pdr
1 tsp garam masala pdr
Hing pdr
Kasuri methi
2 dry red chillies
Procedure
Boil the veggies in sufficient water with salt, drain and fry them in lil oil, keep aside
Make onion paste
Boil the watermelon seeds, cashew nuts till soft and make a smooth paste and keep aside
Heat oil, add cumin seeds, bay leaf, cloves, cardamom,cinnamon, saute well, add the onion paste and fry well till the paste is browned well
Add ginger, garlic and green chillies and fry
Put the tomato paste, allspice powders and saute well and add lil water
Allow cooking for a while, add all the veggies, paneer, salt, and cashew paste. Stir and cook on a slow flame for 15 mins until the sauce is smooth and spluttering out
Add water and adjust the consistency, make it boil for 5 mins
Add Kasuri methi and switch off the flame
In a pan take 2 tsp ghee and fry red chillies and pour this tadka on Kolhapuri masala and serve hot with rot.
