Vegetable Kolhapuri






Ingredients

1/4 cup green peas

1/4 cup paneer cut into cubes

1 capsicum cut into cubes

6-8 french beans cut into pieces

6-8 gobi florets

1 carrot cut into pieces

2 onions chopped

2 chopped tomatoes

3-4 black cardamom/ badi elaichi

1 bay leaf

2 tsp cumin seeds

6 cloves/ lavang

5-6 garlic cloves chopped

1 inch ginger chopped

4 tblsp oil

2 tblsp watermelon seeds

6-8 cashew nuts

chopped coriander leaves

2green chillies chopped

2 tsp coriander pdr

1 tsp cumin pdr

1/2 tsp turmeric pdr

1 tsp garam masala pdr

Hing pdr

Kasuri methi

2 dry red chillies




Procedure

  • Boil the veggies in sufficient water with salt, drain and fry them in lil oil, keep aside

  • Make onion paste

  • Boil the watermelon seeds, cashew nuts till soft and make a smooth paste and keep aside

  • Heat oil, add cumin seeds, bay leaf, cloves, cardamom,cinnamon, saute well, add the onion paste and fry well till the paste is browned well

  • Add ginger, garlic and green chillies and fry

  • Put the tomato paste, allspice powders and saute well and add lil water

  • Allow cooking for a while, add all the veggies, paneer, salt, and cashew paste. Stir and cook on a slow flame for 15 mins until the sauce is smooth and spluttering out

  • Add water and adjust the consistency, make it boil for 5 mins

  • Add Kasuri methi and switch off the flame

  • In a pan take 2 tsp ghee and fry red chillies and pour this tadka on Kolhapuri masala and serve hot with rot.
