Vegetable Noodle Soup






Ingredients


3 tsp oil

6 finely chopped garlic cloves

1 small carrot finely chopped

8 beans finely chopped

4 mushrooms finely chopped

1/2 cup noodles

2 tsp soya sauce

3 tsp tomato ketchup

2 tsp vinegar

1tsp crushed pepper

2 tsp Ching's Schezuan chutney or 1 tsp red chili powder

3-4 tsp corn flour

Salt to taste




Procedure

  • In a pan heat oil, add chopped garlic, and fry till it becomes brown

  • Add the chopped carrot, beans, little salt and saute on a high flame for 2-3 mins

  • Add chopped mushrooms, noodles, salt to taste, and 4 cups water. Cook till noodles are cooked.

  • Now add tomato sauce, soya sauce, vinegar, pepper powder, schezuan chutney and mix well

  • Mix cornflour in 1/4 cup water and add it to the soup, stir continuously till it becomes thick

  • Give a quick boil, check for the salt, and turn off the flame

  • And your vegetable noodles soup is ready to serve.

  • You can also use cabbage, capsicum, or chicken.
