Vegetable Utthappam




Ingredients

4 cups dosa rice

1 cup urad dal

1 cup Poha/beaten rice

1 tsp methi/ fenugreek seeds


For the topping;

1/2 cup grated carrot

1 finely chopped capsicum

2 finely chopped onion

1/4 cup sweet corn kernels

1/4 cup chopped palak

chopped coriander leaves

Salt to taste

Oil for cooking dosa



Procedure


  • Soak dal, methi, and rice in water for 5-6 hrs

  • Wash and grind with washed Poha into a smooth batter and keep overnight for fermentation

  • The next day add salt to taste and water if needed to adjust the consistency

  • Add salt to the topping ingredients and mix properly


  • Heat Tava and make semi thick dosa and spread the topping on dosa and cook with lid covered.


  • Flip the dosa, add 2 tsp oil and cook on both the sides.

  • Serve hot with coconut chutney.
