Ingredients
4 cups dosa rice
1 cup urad dal
1 cup Poha/beaten rice
1 tsp methi/ fenugreek seeds
For the topping;
1/2 cup grated carrot
1 finely chopped capsicum
2 finely chopped onion
1/4 cup sweet corn kernels
1/4 cup chopped palak
chopped coriander leaves
Salt to taste
Oil for cooking dosa
Procedure
Soak dal, methi, and rice in water for 5-6 hrs
Wash and grind with washed Poha into a smooth batter and keep overnight for fermentation
The next day add salt to taste and water if needed to adjust the consistency
Add salt to the topping ingredients and mix properly
Heat Tava and make semi thick dosa and spread the topping on dosa and cook with lid covered.
Flip the dosa, add 2 tsp oil and cook on both the sides.
Serve hot with coconut chutney.
