Vidyarthi Bhava is a very famous restaurant in Bengaluru. The dosa we get here is very popular. It is very crispy from the outside and soft inside. This dosa gets its reddish hue because of the Red rice used.
Ingredients
1 cup red boiled rice
1 cup dosa rice
3/4 cup urad dal
1/4 cup thick poha/Gatti avalakki
1/4 cup toor dal/Split pigeon peas
1/4 cup chana dal / Split Bengal gram
1 tbsp methi/fenugreek seeds
1 cup rice flour
Salt to taste
Pinch of sugar
Oil or ghee for cooking dosa
Procedure
Take Rice, dals,poha, and methi seeds in a bowl. Wash well and soak in enough water for 5-6 hours.
Once it is soaked grind it into a smooth batter and let it ferment for 8-10 hours.
After the batter is fermented,1-2 hours before making dosa add rice flour, salt, and sugar to the dosa batter and mix well.
Heat dosa pan, pour a ladleful of batter, and spread it in concentric circles. You can spread it thick or thin as desired. Drizzle with Ghee or oil. If you want you can smear red chutney on dosa, once it turns golden brown and crisp.
Roast to a crisp and serve with Chutney and potato sabzi.
